Yes, set any starting number.
Yes. Type the pages in "Pages to number" - for example 2-12, or 1-3, 7, 10- (10- means page 10 to the last page) - or tick "Don't number the first page". Counting starts at the first page that gets a number, so with a bare cover page 2 shows 1 unless you set another starting number.
Yes, choose that format before running.
Not yet. Page numbers are stamped using standard Western digits (0-9) in every language, so they display correctly in any PDF reader without needing extra fonts.
There is no limit on pages. Each PDF must be under 80 MB so your browser can handle it.
